The Ultimate Paella Recipe
Recipe courtesy of Tyler Florence
Show: Tyler's Ultimate
Episode: Paella
Total:2 hr 30 minPrep: 30 minInactive: 1 hrCook: 1 hr
Yield: 4 to 6 servings
Level: Intermediate
Ingredients
Chicken:
1 tablespoon sweet or smoked paprika
2 teaspoons oregano
1 (3 pound) frying chicken, cut into 10 pieces
Paella:
1/4 cup extra-virgin olive oil
2 Spanish chorizo sausages, thickly sliced
Kosher salt and freshly ground pepper
1 Spanish onion, diced
4 garlic cloves, crushed
Bunch flat-leaf parsley leaves, chopped, reserve some for garnish
1 (15-ounce) can whole tomatoes, drained and hand-crushed
4 cups short grain Spanish rice
6 cups water, warm
Generous pinch saffron threads
1 dozen littleneck clams, scrubbed
1 pound jumbo shrimp, peeled and de-veined
2 lobster tails
1/2 cup sweet peas, frozen and thawed
Lemon wedges, for serving
Directions
Special equipment: Large paella pan or wide shallow skillet
Combine the paprika and oregano in a small bowl. Rub the spice mix all over the chicken and marinate chicken for 1 hour in the refrigerator.
Heat oil in a paella pan over medium-high heat. Saute the chorizo until browned, remove and reserve. Add chicken skin-side down and brown on all sides, turning with tongs. Add salt and freshly ground pepper. Remove from pan and reserve.
In the same pan, make a sofrito by sauteing the onions, garlic, and parsley. Cook for 2 or 3 minutes on a medium heat. Then, add tomatoes and cook until the mixture caramelizes a bit and the flavors meld. Fold in the rice and stir-fry to coat the grains. Pour in water and simmer for 10 minutes, gently moving the pan around so the rice cooks evenly and absorbs the liquid. Add chicken, chorizo, and saffron. Add the clams and shrimp, tucking them into the rice. The shrimp will take about 8 minutes to cook. Give the paella a good shake and let it simmer, without stirring, until the rice is al dente, for about 15 minutes. During the last 5 minutes of cooking, when the rice is filling the pan, add the lobster tails. When the paella is cooked and the rice looks fluffy and moist, turn the heat up for 40 seconds until you can smell the rice toast at the bottom, then it's perfect.
Remove from heat and rest for 5 minutes. Garnish with peas, parsley and lemon wedges.
Cook's Note
The ideal paella has a toasted rice bottom called socarrat.

Salmon and rice with green tea and pickled vegetables (salmon ochazuke with asazuke) recipe
The Rice Recipes Kitchen invites you to try Salmon and rice with green tea and pickled vegetables (salmon ochazuke with asazuke) recipe. Get easy-to-follow rice recipes and learn how to make Salmon and rice with green tea and pickled vegetables (salmon ochazuke with asazuke).
Ochazuke is a Japanese dish of cooked rice and flavourings, with hot green tea poured over. This recipe for a salmon and salmon roe version is a delicious and simple meal in itself. Japanese pickles are a perfect accompaniment, whether you make them yourself or buy them already made.
Serves 2
Preparation 15min
Cooking 5min
Skill level Mid
By
Adam Liaw
Ingredients
200 g salmon fillet
salt
1 tsp vegetable oil
2 tbsp salmon roe
1 tsp good-quality light soy sauce
2 tbsp Japanese green tea leaves, such as sencha or houjicha
500 ml (2 cups) hot water
Asazuke
¼ head Chinese cabbage (wombok)
1 carrot, peeled and cut into half-moons
1 small cucumber, partially peeled and cut into wedges
½ tsp salt
1 piece of kombu, snipped with scissors into strips
To serve
2 cups warm cooked short-grain rice
1 tsp toasted sesame seeds
few sprigs of mitsuba, roughly chopped (see note)
2 tbsp okaki (tiny rice crackers)
½ sheet nori, very finely sliced
assorted pickles (optional)
freshly grated wasabi
Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
Instructions
Pickling time 30 minutes
To make the asazuke, cut the Chinese cabbage into 3 cm pieces and place in a resealable plastic bag. Add the carrot, cucumber, salt and kombu. Massage the salt into the cabbage until well-distributed and you start to see droplets of liquid appear on the inside of the bag. Squeeze out as much air from the bag as possible, and seal the bag. Stand the asazuke in the fridge for at least 30 minutes before serving (but longer than 1 hour is better).
Score the skin of the salmon and season well all over with salt. Heat a little oil in a frying pan until very hot. Cook the salmon, skin-side down, for about 2-3 minutes or until the skin is very crispy. Turn and cook for a further 2-3 minutes or until the salmon is just cooked. Transfer to paper towel and rest for 1 minute, to soak up any oil. Using your hands, break the salmon and skin into large pieces.
Dress the salmon roe with soy sauce and mix through.
Place the tea leaves in a teapot and add the hot water. Stand to infuse for 2 minutes.
Place the rice in a bowl. Top with the sesame seeds, mitsuba, okaki, salmon flakes, salmon roe and nori. Serve with the pickles, wasabi and a pot of tea on the side. To eat, pour strained hot tea over the rice.
Note
• Mitsuba is a Japanese herb otherwise known as trefoil. If you can’t find mitsuba, you could use shiso leaves instead.

Fish & rice recipe

Takes 15 mins to prepare and 15 mins to cook
Serves 3
Ingredients
small onion, finely diced
garlic cloves, crushed
1 tbsp - olive oil
1 small cup - white long grain rice
1 tsp - bouillon powder
2 small cups - boiling water
smoked haddock or cod fillets, skinned and boned
2 handfuls - frozen peas
In a medium-large sized saucepan, fry the onions and garlic in the oil over a low heat.
While the onions & garlic are frying, wash the rice thoroughly in a sieve under running cold water, then add to the pan, stirring for a minute.
Dissolve the bouillon in the boiling water, add to the pan and cover with lid.
Chop the fish into pieces roughly 2.5cm (1in) wide and add to the pan after the rice has been cooking for approximately 3-4 minutes - just let it sit on top of the rice. Cover the pan again.
After another 2-3 minutes, gently stir in the peas.
Check the rice is cooked after 2 more minutes - it should have a bit of 'bite' to it. Keep the lid on and let it sit for a minute or two before serving.
This is really nice with other veg added if liked, such as mushrooms, cherry tomatoes, or green beans.
You could add a bit of spice & colour by frying the rice with a few saffron strands brought back from your Spanish holiday last year and add a bit of flavour by cooking the rice in a glass of white wine for a minute before adding the bouillon water.

The Rice Recipes kitchen (The home of delicious Rice Recipes) invites you to try Smoked salmon & lemon risotto Recipe. Enjoy our tasty collection of easy rice recipes and learn how to make Smoked salmon & lemon risotto.
Inspired by a risotto from London restaurant Ooze, smoked salmon may sound expensive for a midweek meal, but is no more costly than cooking with red meat
Easy
Serves 4
Prep 5 mins
Cook 20 mins
Ingredients
1 onion , finely chopped
2 tbsp olive oil
350g risotto rice , such as Arborio
1 garlic clove , finely chopped
1½ l boiling vegetable stock
170g pack smoked salmon , three-quarters chopped
85g mascarpone lite
3 tbsp flat-leaf parsley , chopped
grated lemon zest , plus squeeze of juice
handful rocket
Method
Fry the onion in the oil for 5 mins. Add the rice and garlic, then cook for 2 mins, stirring continuously. Pour in a third of the stock and set the timer to 20 mins. Simmer, stirring occasionally, until the stock has been absorbed, then add half the rest of the stock and carry on cooking, stirring a bit more frequently, until that has been absorbed.
Pour in the last of the stock, stir, then simmer until cooked and creamy. Take from the heat and add the chopped salmon, mascarpone, parsley and lemon zest. Grind in some black pepper, but don't add salt as the salmon will be salty enough. Leave for 5 mins to settle, then taste and add a little lemon juice if you like. Serve topped with reserved salmon (roughly torn) and some rocket.

Total Time: 1 hr 35 min
Prep 20 min
Inactive 20 min
Cook 55 min
Yield: 4 servings
Level: Intermediate
Ingredients
1 cup long-grain white rice
2 cups low-sodium chicken broth
1/4 cup freshly squeezed orange juice
1 lime, juiced
2 tablespoons olive oil
1/4 cup finely chopped fresh cilantro, plus more for garnish
2 garlic cloves, minced
1 teaspoon sugar
Kosher salt and freshly ground black pepper
4 (5 to 7-ounce) tilapia fillets, rinsed and patted dry
2 cups jarred or homemade tomato salsa
1 (15-ounce) can black beans, drained and rinsed
2 cups diced fresh pineapple
2 limes, thinly sliced
Directions
Combine the rice and chicken broth in a pot over medium heat and bring to a boil. Reduce the heat to low, cover, and cook until the rice is tender and has absorbed all of the liquid, about 20 minutes.
Preheat the oven to 400 degrees F.
In a mixing bowl, whisk together the orange juice, lime juice, oil, 2 tablespoons of the cilantro, the garlic, and sugar; season with salt and pepper. Add the tilapia fillets to the marinade, turning to coat. Marinate in the refrigerator for 20 minutes, turning occasionally.
Stir together the cooked rice, salsa, beans, pineapple, and remaining 2 tablespoons of the cilantro in a 2 or 3-quart baking dish. Remove the tilapia from the marinade, reserve the marinade, and lay the fish fillets over the rice mixture, overlapping if necessary. Pour the reserved marinade over the fish. Shingle the lime slices over the fish. Bake until the fish flakes easily, is opaque, and cooked through, 25 to 30 minutes. Garnish with chopped cilantro before serving.

Spiced salmon sticks with lemon rice recipe
The Rice Recipes kitchen (The home of delicious Rice Recipes) invites you to try Spiced salmon sticks with lemon rice recipe. Enjoy quick & easy rice recipes and learn how to make Spiced salmon sticks with lemon rice.
Preparation Time 30 minutes
Cooking Time 15 minutes
Ingredients (serves 4)
1 tbs vegetable oil
10 curry leaves
1 1/2 tsp black mustard seeds
1 tsp ground turmeric
2 cups jasmine rice
2 cups (500ml) vegetable stock
Juice and grated rind of 1 lemon
2 salmon fillets, skin and bones removed and cut into 3cm pieces
1 lemon, cut into small wedges
8 bay leaves
2 tbs coriander seeds
2 tsp fennel seeds
1 tsp sea salt
2 baby bok choy, halved
Method
Heat 1 tsp oil in a large heavy based saucepan over a moderate heat. Cook the curry leaves, mustard seeds and turmeric for a minute. Remove from the heat. Wash the rice until the water runs clear and add to the saucepan with the vegetable stock, lemon juice and rind. Bring to the boil. Cover and reduce the heat to low, simmer for about 10 minutes or until the rice has absorbed all of the liquid. Set aside covered for another 10 minutes to allow the rice to steam.
Thread the salmon pieces onto 8 small bamboo skewers with the lemon wedges and bay leaves. Crush the coriander seeds and fennel seeds with the sea salt in a mortar and pestle. Rub the coriander mixture evenly onto the salmon pieces.
Heat remaining oil in a heavy-based pan over a moderately high heat. Cook the salmon sticks for about 3 minutes or until done, turning to ensure even browning.
Place the baby bok choy into a heatproof bowl and cover with boiling water. Drain and refresh in cold water. Serve the lemon rice with the salmon sticks and baby bok choy.
