Healthy Farro Fried "Rice" Recipe

Healthy Farro Fried "Rice"

Farro is an Italian variety of wheat with grains that turn tender and toothsome with cooking. It's often added to soups and risotto but works as a terrific substitute for rice in this easy stir-fry.

Ingredients

1 cup farro
1 bunch scallions, sliced, white and green parts kept separate
2 cloves garlic, finely chopped
1-inch piece peeled fresh ginger, finely chopped
Pinch crushed red pepper
Kosher salt
Pinch sugar
1 tablespoon plus 1 teaspoon vegetable oil
1 medium carrot, thinly sliced
1 cup thawed frozen peas
1 cup bean sprouts
2 tablespoons low-sodium soy sauce
1 teaspoon toasted sesame oil
2 large eggs, lightly beaten

Directions

Bring a medium saucepan filled two-thirds full of water to a boil. Add the farro and cook until tender but still chewy, about 15 minutes. Drain well and cool. (This can be done one day ahead).

Combine the scallion whites, garlic, ginger, crushed red pepper, 1/2 teaspoon salt and sugar in a small bowl and keep near the stove top.

Heat 1 tablespoon of the oil in a large nonstick skillet or wok over medium-high heat. Add the carrot and cook, stirring constantly, until crisp-tender, about 2 minutes. Add the scallion white mixture and continue to stir fry until fragrant, about 30 seconds. Add the cooled farro, half the scallion greens, the peas, bean sprouts, soy sauce and sesame oil and stir fry until the farro is hot, about 2 minutes. Remove from the heat and transfer to a serving dish.

Wipe out the skillet, add the remaining 1 teaspoon of oil and place over medium-high heat. Add the eggs and a large pinch of salt; let cook undisturbed until the eggs begin to bubble up, then stir constantly, breaking the eggs up into small pieces, until they are cooked through, about 30 seconds. Scrape eggs over the farro and stir to incorporate. Sprinkle with the remaining scallion green and serve hot.

Create classic fried rice at home with flavoursome Chinese sausage.

Ingredients

1/4 cup (60ml) peanut oil
1 1/2 tbs light soy sauce
2 eggs, lightly beaten
1 lap cheong (see notes), thinly sliced
1 garlic clove, thinly sliced
2 tsp grated ginger
1 onion, thinly sliced into wedges
2 cups shredded choy sum
1/2 cup sliced spring onion
5 cups cooked SunRice medium grain white rice, cooled
2 tsp sesame oil

Method

Step 1
Heat 1 tbs oil in a wok over medium-high heat. Add 1/2 tbs soy sauce to the eggs and whisk to combine, then add to the wok, swirling over the base to form an omelette. Cook for 1 minute or until almost cooked. Transfer to a board and chop into small pieces, then set aside.

Step 2
Return the wok to medium-high heat, add remaining 2 tbs oil and fry the lap cheong for 1-2 minutes until crisp. Remove from wok and drain on paper towel.

Step 3
Add the garlic, ginger and onion to the wok. Stir-fry for 1 minute, then add the choy sum, spring onion and rice, and stir-fry for 1-2 minutes until the greens have wilted and the rice is heated through.

Step 4
Return the lap cheong and omelette to the fried rice with the sesame oil and remaining 1 tbs soy sauce. Stir-fry for 10 seconds until well combined and heated through, then serve.

Ingredients

150 g diced bacon
2 spring onions, chopped
1 clove garlic, crushed
3 cups cooked brown rice
1/2 pineapple, peeled, cut into 5mm pieces
1/2 cup blanched almonds, roasted
1 red chilli, chopped
1/4 cup coriander leaves, to serve
2 tablespoons Coles brand blended vegetable oil
2 teaspoons sesame oil
2 tablespoons soy sauce
1 tablespoon Coles brand caster sugar
1 teaspoon fresh ginger, grated

Method

Step 1

To make the dressing, whisk the combined oil, soy sauce, sugar and ginger in a small jug until the sugar dissolves.

Step 2

Heat a frying pan over medium-high heat. Cook the bacon for 2-3 mins or until crispy. Add spring onion and cook for 1 min, then add the garlic and cook for 30 secs. Toss in rice, pineapple, almonds and chilli. Cook for 5 mins or until heated through. Drizzle over the dressing and toss through. Top with coriander to serve.

Kimchi fried rice recipe


If you’re like me and always keep a tub of kimchi in the fridge, this is one of those weeknight dishes that’s perfect when there isn’t much else around. You’d be surprised how tasty and satisfying a bowl of this economical fried rice can be.

Ingredients

1½ cups kimchi
1 tbsp vegetable oil
1 tbsp sesame oil
1 tbsp gochujang (Korean chilli bean paste)
4 cups cooked jasmine or short-grain rice
3 spring onions, trimmed and finely sliced
1 tsp salt
1 tbsp toasted sesame seeds
4 small sheets Korean nori, crumbled (or 1 sheet Japanese nori, toasted and crumbled)

Cook's notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.

Instructions

Squeeze as much juice as you can from the kimchi, then finely slice it and set aside, reserving the juice.

Heat a wok over high heat and add the vegetable oil and sesame oil. Add the kimchi to the wok and toss frequently until very fragrant. Add the gochujang and toss for about a minute, or until fragrant.

Add the rice, pressing it onto the sides of the wok to separate the grains. Add the reserved kimchi juice, spring onions and salt, and mix everything well, allowing the rice to lightly toast against the sides of the wok.

Scatter the rice with sesame seeds and crumbled nori and serve.

Note

• Korean nori is available from Asian supermarkets often roasted with sesame oil and salted, and is easily crumbled. I keep a pack or two in my pantry at all times. It makes a great snack.

Ingredients

500 g fresh rice noodle sheets cut into 2cm strips

0.25 cup vegetable oil

2 small Red Onions cut in half and then into wedges

2 stems spring onions cut into 5cm lengths

1 tablespoon Ginger julienne

0.25 cup Dark Soy sauce

2 tablespoons light Soy sauce

0.5 cup finely shredded Chinese cabbage white

1 cup bean sprout

1 tablespoon raosted sesame seed

Method

1. Gently pull rice noodle strips apart.
2. Heat the oil in a hot wok and stir-fry onions, shallots and ginger for 3 minutes.
3. Add noodles and stir-fry for 4 minutes or until noodles begin to soften.
4. Add combined soy sauces and stir-fry for 2 minutes.
5. Finally, add cabbage and bean sprouts and stir-fry for 1 minute.
6. Arrange noodles on a platter, sprinkle with sesame seeds and serve immediately.

Fried Rice with Sweet Soy Sauce Recipe

When you think cilantro and lime, the first thing that comes to mind is usually Mexican fare, but this Fried Rice with Sweet Soy Sauce offers a whole new perspective on these Mexican-topping classics.

Ingredients

3 tablespoons peanut oil, divided
4 large eggs, lightly beaten
3 finely chopped shallots
2 garlic cloves, minced
1 chopped serrano chile
4 cups cooked long-grain brown rice
1/4 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups thinly sliced daikon radish
1/3 cup fresh basil leaves
1/3 cup fresh mint leaves
1/3 cup chopped fresh cilantro
4 lime wedges

Preparation

1. Heat 1 tablespoon oil in a large skillet over medium-high heat; swirl to coat. Pour eggs into pan; cook for 2 minutes or until set, stirring once. Remove eggs from pan.

2. Increase heat to high, and add the remaining 2 tablespoons oil to pan. Add shallots, garlic, and chile; stir-fry 1 minute. Add rice; stir-fry for 3 minutes or until lightly browned. Add cooked eggs, soy sauce, salt, and pepper; toss to combine.

3. Top with radish and herbs, and serve with lime.

Sweet Soy Sauce
1/4 cup lower-sodium soy sauce
1/4 cup packed dark brown sugar

Bring soy sauce and brown sugar to a boil in a small saucepan over medium heat. Simmer 2 minutes or until reduced to 1/4 cup.

Tofu Fried Rice Recipe

Ingredients

2 cups uncooked instant rice
2 tablespoons vegetable oil, divided $
1 (14-ounce) package reduced-fat firm tofu, drained and cut into (1/2-inch) cubes
2 large eggs, lightly beaten
1 cup (1/2-inch-thick) slices green onions
1 cup frozen peas and carrots, thawed
4 garlic cloves, minced
1 teaspoon minced peeled fresh ginger
2 tablespoons sake (rice wine)
3 tablespoons low-sodium soy sauce
1 tablespoon hoisin sauce
1/2 teaspoon dark sesame oil
Thinly sliced green onions (optional)

Preparation

Cook rice according to package directions, omitting salt and fat.
While rice cooks, heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add tofu; cook 4 minutes or until lightly browned, stirring occasionally. Remove from pan. Add eggs to pan; cook 1 minute or until done, breaking egg into small pieces. Remove from pan. Add 1 tablespoon vegetable oil to pan. Add 1 cup onions, peas and carrots, garlic, and ginger; sauté 2 minutes.

While vegetable mixture cooks, combine sake, soy sauce, hoisin sauce, and sesame oil. Add cooked rice to pan; cook 2 minutes, stirring constantly. Add tofu, egg, and soy sauce mixture; cook 30 seconds, stirring constantly. Garnish with sliced green onions, if desired.

Note:

Using frozen peas and carrots plus bottled minced garlic and ginger speeds up preparation of this simple Chinese standby. Keep any leftover sake tightly capped in the refrigerator for up to three weeks, or you can substitute a tablespoon of rice wine vinegar for the sake.

 Ingredients  

40g butter
2 garlic cloves, crushed
2cm piece fresh ginger, peeled, finely grated
2 cups jasmine rice, rinsed
3 dried bay leaves
3 cups chicken stock
1/2 cup frozen peas and corn
1/4 cup fried shallots (see note)


Method 

Step 1 Melt butter in a large heavy-based saucepan over medium heat. Add garlic and ginger. Cook, stirring, for 1 minute or until fragrant. Add rice, bay leaves and chicken stock. Bring to the boil. Reduce heat to medium-low. Simmer, uncovered, for 10 minutes or until liquid is absorbed. 

Step 2 Add peas and corn. Remove from heat. Cover, set aside for 10 minutes. Discard bay leaves. Fluff rice with a fork. Season with salt and pepper. Serve topped with fried shallots.

Notes

Serves 6 as a side.

Fried shallots can be found in the Asian food aisle of major supermarkets. They are sometimes labelled fried onions.

Ingredients

2 1/2 tbs sunflower oil
3 eggs, lightly beaten
2 small red chillies, seeds removed, chopped
6 spring onions, finely shredded
2 garlic cloves, finely chopped
400g peeled green prawns, tails intact
200g medium-grain rice, cooked to packet instructions
1/3 cup (80ml) soy sauce
1 tsp sesame oil
2 tbs sweet chilli sauce
1 cup (120g) frozen peas
Coriander leaves and lime wedges (optional), to serve


Method

Heat 2 tsp sunflower oil in a wok or large frypan over medium- high heat. Add the egg and cook, stirring, for 1-2 minutes until softly scrambled. Remove egg from the pan and set aside.

Add remaining 2 tbs sunflower oil to the pan, then cook chilli, spring onion and garlic, stirring, for 1 minute or until fragrant. Add prawns and cook for 2-3 minutes until opaque. Return egg to the pan with rice, soy, sesame oil, sweet chilli sauce and peas, then cook, stirring, for 2-3 minutes to warm through. Garnish with coriander and serve with lime wedges, if using.

Shrimp and Egg Fried Rice with Napa Cabbage Recipe

Ingredients

6 tablespoons peanut oil
2 shallots, thinly sliced
1 (2-inch) piece ginger, peeled and grated
1/2 small head napa cabbage, core removed and finely sliced
Salt
2 cloves garlic, minced
1/2 pound medium shrimp, peeled and deveined
3 large eggs, lightly beaten
4 cups cooked long-grain white rice
1/2 cup frozen peas, thawed in warm water
3 tablespoons soy sauce
1/4 bunch scallions, sliced, for garnish
1/2 cup chopped peanuts, for garnish

Directions

Heat 2 tablespoons of the peanut oil in a wok or a large nonstick skillet over medium-high flame. Give the oil a minute to heat up, then add the shallots, the ginger, and stir-fry for 1 minute until fragrant. Add the cabbage and stir-fry until the cabbage is wilted and soft, about 8 minutes; season with a nice pinch of salt. Remove the vegetables to a side platter and wipe out the wok with dry paper towel.

Put the pan back on the heat and coat with 2 tablespoons of oil. Add the garlic and to the wok and saute gently until fragrant. Add shrimp and cook for 2 to 3 minutes until pink. Set aside on platter with vegetables. Add remaining oil to the wok and when hot, crack the eggs into the center. Scramble the egg lightly, then let it set without stirring so it stays in big pieces. Fold in the rice and toss with the egg until well combined, breaking up the rice clumps with the back of a spatula. Return the sauteed vegetables and shrimp to the pan along with the peas and season with salt and soy sauce. Toss everything together to heat through. Spoon the fried rice out onto a serving platter, and garnish with scallions and peanuts.

Fried rice is a quick and easy dinner solutions. This one contains a delicious combination of prawns, bacon and vegetables.

INGREDIENTS 10

Ingredients


2 cups (380g) brown rice

olive oil cooking spray
4 eggs, lightly beaten
125g packet 97% fat-free bacon, chopped
1/2 teaspoon sesame oil
4 green onions, sliced
500g cooked prawns, peeled, halved
1 cup frozen peas
1 cup beansprouts, trimmed
2 tablespoons light reduced-salt soy sauce

Method


Cook rice in a saucepan of boiling salted water for 30 to 35 minutes or until tender. Drain. Rinse under cold water. Set aside.

Heat a wok over medium-high heat. Spray with oil. Pour in half the egg. Swirl to coat. Cook for 1 minute or until just set. Remove to a board. Roll up. Stand for 1 minute. Repeat with remaining egg. Thinly slice.

Increase stovetop heat to high. Spray wok with oil. Add bacon. Stir-fry for 3 to 4 minutes or until golden. Add oil, onions, prawns and peas. Stir-fry for 1 minute. Add rice. Stir-fry for 3 minutes or until heated through. Add egg, sprouts and soy sauce. Stir-fry until combined. Serve.

Recipe facts:

Serves: 2 

Ingredients

1 cup rice
1tsp vegetable oil
3 rashers bacon
½ onion, finely chopped
2 eggs, beaten

Preparation:

Bring a large pan of salted water to the boil and cook the rice according to packet instructions.

When cooked, drain and set aside to keep warm.

Dice the bacon and fry in 1 tsp oil. When nearly cooked, add the chopped onion.

Add the eggs and rice to the frying pan and stir quickly to ensure the egg is worked through all the mixture.

Serve once the egg is cooked through.

Ingredients

15ml (1tbsp) oil
2 x 250g pouches Tesco Long Grain Microwave Rice
100g (3½ oz) frozen peas
50g (2oz) ham, diced
30ml (2tbsp) groundnut oil
4 spring onions, chopped
125g (4oz) beansprouts
15ml (1tbsp) light soy sauce
2 eggs, beaten

Preparation

Heat the oil in a wok or large frying pan and add the rice. Stir-fry for 2-3 minutes, then add the ham and peas and cook for 2 minutes. Stir in the spring onions, beansprouts and soy sauce and cook for 1 minute

Move the mixture to one side of the wok. Pour the beaten egg mixture into the other side of the wok and leave for about 10 seconds until it begins to set. Using a chopstick, briskly swirl around the egg to break it up and then toss around with the rice. Stir-fry for a further minute and serve straight away.

Spicy prawn fried rice recipe

 Enjoy the hot summer nights with this easy spicy prawn rice using only six ingredients.

Cooking Time 30 minutes

Ingredients (serves 4)

1 1/2 cups jasmine rice
2 tablespoons sambal oelek (see note)
350g medium peeled green prawns, deveined (tails intact)
2 tablespoons peanut oil
3 green onions, thinly sliced
250g mini roma tomatoes, halved lengthways
1 cup fresh coriander leaves, roughly chopped

Method

Cook rice following packet directions. Drain. Rinse. Drain. Spread on a tray. Refrigerate for 2 hours or until cold.

Place sambal oelek into a medium bowl. Add prawns. Toss to coat. Set aside for 10 minutes.

Heat a wok over high heat. Add oil. Swirl to coat. Add prawns and sambal oelek mixture. Stir-fry for 2 to 3 minutes, or until pink and just cooked through. Add onion. Stir-fry for 1 minute. Add rice and tomatoes. Stir-fry for 2 minutes or until rice is hot. Add coriander. Toss to combine. Serve.

Notes

For less heat, reduce sambal oelek to 1 tablespoon. Allow 2 hours refrigeration time

Fragrant Fried Rice Pilaf Recipe

Ingredients

1 cup jasmine rice
1/4 cup vegetable oil
4 eggs, beaten
Salt and pepper
3 scallions, thinly sliced, white and green parts separated
1 large red bell pepper, cut into 1/4-inch cubes
1 can (15.5 oz.) white beans, rinsed
1 cup frozen peas and carrots mix, thawed
1 teaspoon ground cumin
2 tablespoons soy sauce
1/2 cup chopped cilantro

Directions

In a small saucepan with a tight-fitting lid, cover the rice with water and stir until the water becomes cloudy; drain and repeat twice. Return the rice to the saucepan, add 1 cup cold water, cover and cook over medium-low heat until the water has been absorbed and the rice is cooked, about 25 minutes. Let sit for 5 minutes, then fluff with a fork.
 

Meanwhile, in a large nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add the eggs, season with salt and pepper and cook, stirring, until set and just dry, about 1 minute. Transfer to a cutting board and let cool; coarsely chop.
 

In the same skillet, heat 1 tablespoon oil over medium-high heat. Add the scallion whites and bell pepper and cook until crisp-tender, about 1 minute; season with salt and pepper. Add the beans and peas-carrots mix and cook until heated through; transfer to a large bowl.
 

In the same skillet, heat the remaining 2 tablespoons oil and the cumin over medium-high heat. Stir in the cooked rice. Spread into a single layer and cook, undisturbed, until the rice forms a crust, about 3 minutes. 

Break up the rice and sprinkle with the soy sauce. Stir in the scallion greens, cilantro, bean mixture and eggs and cook until heated through.

Ingredients 

200.0g basmati rice or 400g/14oz leftover cooked rice
1-2 red chillies , deseeded and grated or very finely chopped
3 garlic cloves , crushed
1.0 tbsp sunflower oil
2 large carrots , diced
200g Chinese cabbage , finely sliced
2 eggs , lightly beaten
3 spring onions , sliced
200.0g frozen peas
1.0 tbsp soy sauce , plus extra for serving, if you like
 

Method 

If making the rice from scratch, cook it following pack instructions, then drain. Mix the chillies and garlic (in a pestle and mortar, if you have one) with a pinch of salt, to make a paste.
 

Heat oil in a wok or large frying pan on a medium-high heat. Add the carrots and stir-fry for 5 mins until tender. Add the cabbage and chilli paste and cook for 1 min more. Tip in the cooked basmati or leftover rice and stir-fry for 1 min until piping hot.
 

Push the rice mixture to one side of the pan. Add the eggs to the cleared space and scramble until set. Mix in the onions, peas and soy and stir-fry everything together until the peas are hot.

Chicken and Pineapple Fried Rice with Herbs Recipe

Ingredients 

1 cup - cooked rice
100g - minced chicken
70g - pineapple (diced)
25g - cashew nuts
red chilli (chopped)
2 tablespoon - peanut oil
1 handful - coriander leaves (chopped)
1 handful - basil leaves
spring onions (chopped)
clove garlic (chopped)
1 tablespoon - soy sauce
1 tablespoon - fish sauce
a dash of - pepper
 

Directions: 

Put the minced chicken in a bowl. Add in ½ tablespoon soy sauce and ½ tablespoon fish sauce, chopped chilli, pepper and chopped coriander leaves. Mix well. Leave to marinate for 10 minutes.
 

Heat oil in a wok or a large frying pan. Add in cashew nuts and fry till golden brown. Drain and set aside.
 

Sweat the garlic in the pan. Add in chicken and fry for 3-4 minutes until it is cooked. Add in spring onions, basil and pineapple. Stir for 2 minutes.
 

Add in the rice. Stir in the rest of the soy sauce and fish sauce. Stir for 2 minutes. Add in the cashew nuts. Mix well. Season to taste.
 

Serve chicken and pineapple fried rice in a pineapple shell cut into half. Garnish with chillies, coriander and chopped fried beaten egg with chives.
 

For the garnish: beat the egg with chopped chives, soy sauce, fish sauce and pepper. Heat some oil in a frying pan and fry the egg till golden brown like a thin omelette. Slice the omelette into thin strips. Use as garnish.

Serve the pineapple fried rice in a hollow out pineapple shell can make the dish very attractive.

Ingredients

2tbsp groundnut oil
1tbsp freshly grated root ginger
3 shallots, finely chopped
3 dried Chinese mushrooms, soaked in hot water for 20 minutes, then drained and finely chopped
250g (8oz) skinless chicken breast fillets, finely diced
1tbsp Shaohsing rice wine or dry sherry
1tsp five-spice powder
1tbsp dark soy sauce
50g (2oz) dry-roasted peanuts
300g (10oz) cooked jasmine rice or glutinous rice
3-4tbsp light soy sauce
1-2tbsp toasted sesame oil
ground white pepper
1 spring onion, finely chopped

Heat a wok or pan over a high heat and add the groundnut oil. Add the ginger, shallots and Chinese mushrooms and cook for a few seconds.

Add the chicken and cook for a minute or two, then add the rice wine or sherry followed by the five-spice powder. As the chicken starts to turn white, add the dark soy sauce.

Add the peanuts and then the rice, mix well and stir-fry for 1 minute.

Season with the light soy sauce, sesame oil and pepper to taste and stir to mix. Finally, stir in the spring onion, transfer to a serving dish and serve immediately.

Vegetarian fried brown rice recipe - How to make Vegetarian fried brown rice

Ingredients (serves 4)

2 eggs
2 teaspoons vegetable oil
1 onion, finely chopped
2 garlic cloves, crushed
1 red chilli, finely chopped
1 large head broccoli, florets removed
1 large carrot, halved, thinly sliced
150g green beans, roughly chopped
2 cups brown basmati rice, cooked
2 tablespoons reduced-salt soy sauce or tamari (see note)

Method

Beat eggs with a fork until small bubbles appear. Heat a wok over medium-high heat until hot. Add 1 teaspoon of oil. Add eggs and swirl around wok to form a thin omelette. Cook for 1 minute. Turn and cook a further minute. Remove to a board. Thinly slice.

Add remaining oil, onion, garlic and chilli to wok. Stir-fry for 2 minutes. Increase heat to high. Add broccoli, carrot and beans. Stir-fry for 4 minutes, or until tender and crisp.

Add rice and soy sauce or tamari to wok. Stir-fry for 3 minutes, or until heated through. Add egg and stir to combine. Serve immediately.

Notes

Tamari is naturally femented soy sauce which contains a small amount of wheat. Look for it near the health food in the supermarket.

Hint: Cook rice then refrigerate for 4 hours before stir-frying. This will keep the grains from becoming gluggy.

Sticky chicken sticks with egg-fried rice recipe

Ingredients

For the sticky chicken sticks:
300g diced chicken breasts
2 tbsp dark soy sauce
3 tbsp runny honey
2 tsp tomato purée
1 tsp fresh ginger, grated

For the egg fried rice:
1 egg
1 tsp sesame oil
1 tsp dark soy sauce
1 tbsp sunflower oil
250g (8oz) cooked long-grain or basmati rice (you can usepackets of ready-cooked rice for convenience)
75g (3oz) frozen peas, defrosted
75g (3 oz) sweetcorn
3 spring onions, finely chopped

Preparation

Place the bite-sized pieces of chicken in a bowl. Add the soy sauce, honey, tomato purée and ginger.

Thread the marinated chicken onto small skewers and place under the grill to cook for 8-10 minutes, turning occasionally and basting with the marinade as they cook.

To cook the egg fried rice, beat together the egg, sesame oil and soy sauce. Keep on one side. Heat the sunflower oil in a wok and when it is shimmeringly hot, add the rice, stir-frying for a few minutes until heated through. Add the peas, sweetcorn and spring onions, stir-frying for a further couple of minutes. Pour the egg mixture over the top and stir-fry until the egg is coating the rice and cooked

Cook's Tip To use leftover rice in this recipe, make sure you cool the rice rapidly and keep it in the fridge for no more than 24 hours before cooking the egg fried rice.
